15 ml | Lemon juice (freshly squeezed) |
15 ml | Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer |
2 dash | Angostura Aromatic Bitters |
3 drop | Saline solution 4:1 (20g sea salt to 80g water) |

How to make:
- Select and pre-chill a Nick & Nora glass.
- Prepare garnish of dehydrated apple slice and dehydrated raspberry dust.
- SHAKE all ingredients with ice and strain back into shaker.
- DRY SHAKE (without ice) to emulsify.
- FINE STRAIN into chilled glass.
- Garnish with apple slice dusted with powdered raspberry.
