60 ml | Ketel One Vodka |
2.5 ml | White balsamic vinegar |
15 ml | Lemon juice (freshly squeezed) |
15 ml | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) |
2 dash | Saline solution 4:1 (20g sea salt to 80g water) |

How to make:
- Select and pre-chill a Coupe glass.
- Prepare black pepper and cherry tomato for garnish.
- MUDDLE tomatoes in base of shaker.
- Add other ingredients and SHAKE with ice.
- FINE STRAIN into chilled glass.
- Dust with grind of black pepper and garnish with a cherry tomato cut to sit on glass rim.

History:
Adapted from a recipe created in 2011 by Jimmy Barrat at La Petite Maison Dubai (LPM). This was also the signature cocktail Jimmy made for the 2012 World Class Bartenders' competition.
