Ingredients:
4 fresh Strawberries (hulled, small & ripe)
30 ml Giffard Fraise des Bois liqueur
5 ml Lemon juice (freshly squeezed)
105 ml Fiol Extra Dry Prosecco

How to make:

  1. Select and pre-chill a Flute glass.
  2. Prepare garnish of heart-shaped strawberry slice.
  3. MUDDLE strawberries in base of shaker.
  4. Add liqueur and lemon juice, SHAKE with ice.
  5. FINE STRAIN into chilled glass.
  6. TOP with sparkling wine and briefly stir.
  7. Garnish with strawberry slice on rim.

Strawberries seem to complement prosecco even better than white peaches so perhaps order this in preference to a Bellini.

History:

Named for the 19th-century Italian opera composer, Gioachino Antonio Rossini. This is one of the most popular Bellini variants in Venice.
