Serve in a

Rocks glass
Ingredients:
35 ml Hayman's London Dry Gin
5 ml Extra virgin olive oil
10 ml Oolong tea
3.75 ml Honey
10 ml Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
20 ml Lemon juice (freshly squeezed)
15 ml Egg white

How to make:

Combine all ingredients in a tin dry shake and then wet shake fine strain in to glass

Notes:

Oolong tea is infused into vodka for 30 mins at a 5% ratio Vodka:Milk oolong tea from Taiwan.

Origin:

A savoury gin sour, that highlights the green and creamy texture of Haymans Gin.

Oolong tea gives a creamy texture and boosts the orris root and juniper to the front of the drink.

The Spanish olive oil gives the Haymans London Dry Gin a green note that helps the coriander and orange peel finish the drink.
