Ingredients:
22.5 ml Jamaican aged blended rum with funk
22.5 ml Amaro liqueur
22.5 ml Lemon juice (freshly squeezed)
22.5 ml Ginger syrup (equal parts ginger juice to caster sugar by weight
3 drop Saline solution 4:1 (20g sea salt to 80g water)

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of skewered crystallised ginger.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with skewered crystallised ginger.

Review:

A riff on Sam Ross' Mosquito. Like in the original, fiery ginger proves more than capable of seeing off an assertive bittersweet amaro and characterful pot still Jamaican rum. Beware, the Lantern Fly is sap-sucking!

History:

Adapted from a recipe created by Jojo Colona at Attaboy bar in Manhattan, New York City. Jojo's original recipe calls for equal parts Doctor Bird Jamaican pot still rum, Amargo-Vallet amaro, lemon juice and ginger juice syrup.
