Ingredients:
25 ml La Fée Parisienne absinthe
25 ml Lemon juice (freshly squeezed)
25 ml Chilled water
20 ml Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
1 dash Angostura Aromatic Bitters
15 ml Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.
  6. EXPRESS lemon zest twist over the cocktail and use as garnish.
